Whole30 – Day 3

Is there a more beautiful sight in the world? I think not.

Workout: Rest day.

Today’s Food:

Scrambled eggs; chicken, peppers, and guacamole; hamburger patty with jalapeno mustard; steak, jicima fries and strawberries.

The jicima fries were a moderate success. I sliced the jicima into fry shapes, coated them in coconut oil, salt and pepper and cooked them over medium heat in a skillet. They tasted great, but the texture left a lot to be desired. Jicima apparently doesn’t soften when it’s heated, so it was halfway crispy and halfway soft. I’d rather just have them crispy.
